<p>Bailey’s Original Irish Cream is the world’s first original cream liqueur and is a combination of dairy cream and Irish whisky. The founders wanted to create something from two simple treasures that Ireland is known for, delicious dairy cream and world-renowned Irish whisky. The creation was made possible thanks to two men, Matt Gluckman and Matt McPherson, perfecting the technique of combining fresh cream with spirits without souring the cream in the process. It took them two years of trial and error but by 1974, the Baileys recipe was created. They borrowed a process from the ice cream industry which removes and replaces the protein in the cream.</p>
<p>Every year, roughly 200 million litres of fresh Irish milk are required to produce the creamiest of cream used in the production of Baileys. For comparison, that is enough to make an estimated 3.3 billion Baileys milkshakes. This milk is mostly supplied from small, family-owned farms where the cows roam freely on luscious green fields handed down from one generation to the next. Baileys receives a daily fresh supply of cream from an estimated 40,000 cows and 1,500 farms.</p>
<p>The Hayden Family is one of Bailey’s partner farmers that has been successfully running the family farm since 1865. Currently owned by 4<sup>th</sup> Generation owners, Joe and Michael Hayden. Joe Hayden has been milking the cows on the farm for over 44 years. The breed of cows used for the cream is called happy Holstein-Friesian cows. These cows are fed with four specific varieties of grass.</p>
